Dried Apple-Cinnamon Cookies

 Including more raw foods in your diet is important to keep your body in a more alkaline state. When we eat raw fruits and vegetables it leaves an alkaline ash in our body, which leaves it in a normal pH range and does not deplete our own calcium & mineral reserves. When you consume great quantities of animal products, soft drinks, junk foods, cooked foods and refined foods you create an acid ash in your body which takes calcium & mineral reserves from your bones & teeth in order to establish the normal pH and alkaline environment your body requires to maintain good health. By soaking the raw almonds overnight, using fresh apples, raisins, raw agave and drying these cookies at 105 degrees, the cookies retain more of their precious enzymes and ability to keep your body in this normal pH & alkaline state.

Dried Apple-Cinnamon Cookies

6 apples
3/4 cup agave nectar
1 3/4 cup almonds (soak overnight, drain & rinse before using)
1 1/2 cup raisins
1 tsp. vanilla
4 Tbsp. cinnamon

1.) Peel & core apples. Put in food processor and process until chunky.
2.) Mix all ingredients together.
3.) Cut parchment paper the size of your dehydrator trays.
4.) Roll dough in balls and flatten on parchment paper.
5.) Dehydrate at 105 degrees for 2-3 hours. Remove parchment paper and continue to dehydrate for an additional 22 hours. Cookies will chewy, not dry.
6.) Enjoy!!
